Main Ingredients
  • 2 15-ounce cans chickpeas rinsed and drained
  • 3 avocados diced
  • 2 Tablespoons shallots minced
  • 2 jalapenos seeded and diced
Dressing
  • 2 limes juiced
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne if desired
For Topping
  • 1/4 cup crumbled cotija cheese or feta
  • 2 Tablespoons chopped cilantro

Method
 

  1. In a small bowl, whisk together the dressing ingredients.
  2. Add chickpeas, avocado, jalapenos and shallot to a large bowl. Pour dressing over this mixture and toss gently to combine.
  3. Top with cotija cheese and cilantro and serve.

Notes

This dish is best enjoyed fresh. Feel free to adjust the seasoning to taste and add more lime juice for extra zest.
