Ingredients
  

Chicken
  • 1134 g boneless skinless chicken breasts
Seasoning
  • 2 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Vegetables
  • 1 piece medium onion, thinly sliced
  • 411 g diced tomatoes, drained 14.5 oz can
Liquids
  • 120 ml balsamic vinegar
  • 120 ml low-sodium chicken broth
Garnish
  • chopped fresh parsley for serving

Method
 

  1. Combine Italian seasoning, garlic powder, salt and pepper in a small bowl and sprinkle over chicken breasts.
  2. Place chicken breasts in the insert of the slow cooker.
  3. Top chicken with onion slices and diced tomatoes. Pour balsamic vinegar and chicken broth over chicken.
  4. Cover and cook on low for 5-6 hours or high for 2 1/2-3 hours, until the chicken is cooked through.
  5. Serve hot, sprinkled with chopped fresh parsley.

Notes

This dish pairs well with a side of steamed vegetables or a fresh salad. You can also serve it over rice or pasta to make it more filling.
