Ingredients
  

Salad
  • 2 cans 15-ounce cans chickpeas rinsed and drained
  • 3 pieces avocados diced
  • 2 Tablespoons shallots minced
  • 2 pieces jalapenos seeded and diced
Dressing
  • 2 pieces limes juiced
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 0.25 teaspoon cayenne if desired
For Topping
  • 0.25 cup crumbled cotija cheese or feta
  • 2 Tablespoons chopped cilantro

Method
 

  1. In a small bowl, whisk together the dressing ingredients.
  2. Add chickpeas, avocado, jalapenos and shallot to a large bowl. Pour dressing over this mixture and toss gently to combine.
  3. Top with cotija cheese and cilantro and serve.

Notes

This salad can be enjoyed as a main dish or a side. Feel free to add more vegetables or use different types of cheese as per your preference.
