Ingredients
  

  • 2 cans chickpeas 15.5-oz. cans, drained and rinsed
  • 1 medium cucumber sliced into quarter-moons
  • 1 whole red bell pepper seeds and ribs removed, finely chopped
  • 0.5 whole red onion thinly sliced
  • 0.5 cup crumbled feta about 3 oz.
  • 0.5 cup halved pitted Kalamata olives
  • to taste Kosher salt
  • to taste Freshly ground black pepper
  • 0.5 cup extra-virgin olive oil
  • 0.25 cup white wine vinegar
  • 1 Tbsp finely chopped fresh parsley
  • 1 Tbsp fresh lemon juice
  • 0.25 tsp crushed red pepper flakes

Method
 

  1. In a large bowl, toss chickpeas, cucumber, bell pepper, onion, feta, and olives; season with salt and black pepper.
  2. In a jar with a lid, combine oil, vinegar, parsley, lemon juice, and red pepper flakes. Seal jar and shake until emulsified; season with salt and black pepper.
  3. Pour dressing over salad and toss to coat just before serving.

Notes

This salad is perfect for meal prep and stays fresh for a couple of days in the refrigerator. Feel free to add grilled chicken or shrimp for a protein boost.
