Ingredients
  

Vegetables
  • 300 g green cabbage, finely shredded
  • 200 g purple cabbage, finely shredded
  • 100 g carrot, finely shredded
Dressing
  • 120 ml mayonnaise
  • 15 ml white vinegar
  • 7.5 ml apple cider vinegar
  • 0.5 tsp sugar
  • 0.5 tsp celery seeds
  • 0.25 tsp salt or to taste
  • 0.25 tsp ground black pepper or to taste

Method
 

  1. In a large serving bowl, combine cabbage, purple cabbage, and carrot.
  2. In a small mixing bowl, mix together mayonnaise, vinegars, sugar, celery seeds, salt, and pepper. Stir to combine.
  3. Add dressing to the salad and toss to combine.
  4. Serve immediately, or refrigerate for one hour to allow the flavors to infuse into each other more. Add more salt and pepper if desired, to taste.

Notes

This coleslaw can be made a day ahead to allow flavors to fully develop. Adjust seasoning to your preference.
