Ingredients
  

Salad
  • 850 g chickpeas rinsed and drained
  • 3 avocados diced
  • 30 g shallots minced
  • 2 jalapenos seeded and diced
Dressing
  • 2 limes juiced
  • 30 ml extra virgin olive oil
  • 1 tsp kosher salt
  • 1 tsp ground cumin
  • 0.25 tsp cayenne if desired
Topping
  • 60 g cotija cheese or feta, crumbled
  • 30 g cilantro chopped

Method
 

  1. In a small bowl, whisk together the dressing ingredients.
  2. Add chickpeas, avocado, jalapenos, and shallot to a large bowl. Pour dressing over this mixture and toss gently to combine.
  3. Top with cotija cheese and cilantro and serve.

Notes

For a vegan version, omit the cheese or substitute with a vegan alternative. This salad pairs well with grilled proteins or can be enjoyed on its own.
