Ingredients
  

Arugula Salad
  • 170 g baby arugula about 4 cups
  • 60 ml Parmesan cheese, shaved
  • 15 ml lemon juice, freshly squeezed
  • 45 ml extra virgin olive oil
  • 0.125 tsp salt or more to taste
  • 0.125 tsp ground black pepper or more to taste

Method
 

  1. In a small mixing bowl, combine lemon juice, olive oil, salt and pepper. Stir well to mix.
  2. In a large serving bowl, add arugula and the dressing. Toss well to combine.
  3. Sprinkle with shaved Parmesan cheese on top and serve immediately.

Notes

For an extra burst of flavor, try adding a sprinkle of toasted pine nuts or a few slices of avocado.
