Ingredients You’ll Need
To create this delightful dish, gather the following ingredients:
- ¾ cup sabudana or sago pearls
- ¾ cup water
- 1 cup + 2 tablespoons boiled & mashed potatoes
- ½ cup roasted peanuts (crushed coarsely)
- 1 green chilly (finely chopped)
- 2 tablespoons finely chopped coriander
- ½ teaspoon cumin seeds
- Juice of ½ lemon
- ½ – ¾ teaspoon salt
- ¼ teaspoon sugar
- 15 curry leaves (finely chopped)
- 3 teaspoons cooking oil
Step-by-Step Directions
Soak the Sabudana
Start by washing and soaking the sabudana in ¾ cup water for 6-8 hours or overnight. This step ensures the sabudana absorbs the water and becomes fluffy. After soaking, drain any excess water.
Prepare the Mixture
In a large bowl, combine the soaked sabudana with the rest of the ingredients, except the oil. Mix well to ensure all flavors blend perfectly.
Preheat and Shape
Preheat your air fryer to 190°C. While it’s heating, grease your palms with a bit of oil, take a golf ball-sized amount of the sabudana mixture, and flatten it into a disc shape. Repeat the process until all vadas are formed.
Cook in the Air Fryer
Brush the air fryer mesh lightly with oil, place the vadas on it, and brush a little more oil on top. Be careful not to overcrowd the air fryer; leave some space between each vada. Air fry them for 8 minutes at 190°C, then flip them, brush with oil, and fry for another 9 minutes at 200°C. They will crisp up beautifully as they cool.
Repeat
Repeat the air frying process for any remaining vadas.
